to create decorative curls of butter for serving or garnishing food dishes. The
curler is dipped in hot water and then drawn across the top of a 1/4 pound
stick of butter that has been refrigerated and remains somewhat hard and cold.
If the butter is too cold, the curl will be too brittle, so allow the stick to
warm moderately for better carving of the curl. To retain the shape of the
curl, place carved curls in a container of ice water and then refrigerate, in
the water, until just prior to serving.
The construction of a butter curler might look slightly bizarre to someone
who is not familiar with the tool. It has a long handle attached to a serrated and
hooked metal blade. With practice, a cook can drag the blade across a stick of
chilled butter to generate wispy shavings of butter, tightly furled butter
flowers and other garnishes. This utensil also can be used to create delicate
textured patterns in butter.
Working with a butter curler can take a few tries before a cook gets it
right. As a general rule, the butter is chilled, and the butter curler is
warmed before use. Varying amounts of pressure yield different curled butter
designs. If the butter breaks or flakes, it is too cold and should be allowed
to warm slightly before the cook tries again.

A countertop or
stovetop grill that is used to make the traditional panini, a small Italian
sandwich. Also referred to as a Panini Maker, Panini Press, or a Grill Press,
the Panini Grill contains top and bottom ridged heat plates that press and
grill the bread in one operation. This feature produces a golden, crispy crust
on both sides of the sandwich without requiring the sandwich be flipped to
grill the other side. Typically, the sandwich is filled with a variety of
ingredients such as meats, cheeses, roasted bell peppers, roasted egg plant,
sweet basil, sun-dried tomatoes, and other similar sandwich fillings. As the
weight of the grill presses against the sandwich top and bottom, the inside
fillings and the crust are compressed as is the crust into a compact sandwich.
Made from materials such as cast aluminum or cast
iron, Panini Grills are manufactured with round, square or rectangular grill
plates of varying weights. Lighter weight models are typically not as effective
as the heavier grills which serve to provide more compression weight as the
sandwich bakes in the grill. There are a variety of grills available from free
standing electric models to stovetop grill pans that will effectively make a
sandwich with the distinctive grill marks. The electric Panini Grills may be
manufactured with separate grill plates that can be removed for ease of
cleaning or are not only removable but also can be replaced with flat surfaced
grill plates so the grill is adaptable to grilling many different foods. Most
of the electric Panini Grills have top covers attached to "floating" or
adjustable hinges that allow the cover to be raised up an inch or so to
accommodate thicker sandwiches as they grill. Other features on the electric
grills include non-stick surfaces, adjustable temperature controls, LED
readouts on controls, grilling timers, and external fat collectors that catch
any fat that drains from the grilled foods. The most common sizes for the grill
surfaces are approximately 14 inches in length and 10 inches in depth.
Stovetop Panini Grill pans offer a wide variety of
designs from which to choose. Single burner round or square pans are readily
available as well as double burner rectangular pans for a wider cooking
surface. Since the pans can be used for a variety of other cooking tasks, there
are many types that can be considered. Some pans are sold with a heavy metal,
grooved press (grill plate) to be placed on top of the sandwich as it grills,
holding it in place to grill one side before flipping it over to grill the
other.
Since grill pans may be difficult to clean between the
ridges, it is suggested that a grill sponge or scrubber be used which is formed
with similar patterns to the ridges in the pan so that it fits between and
easily cleans the spaced indentations of the pan. In addition to the panini
sandwiches, the Panini Grill is also used to grill buns, fish, steaks, eggs,
pancakes, bacon, chops, quesadillas, vegetables, fruits, and poultry, to name
only a few foods enabling it to serve as a versatile kitchen appliance.

The blade edge of a carving knife is either smooth or beveled. The blade should
be large enough to carve across the cut of meat, poultry, or fish in one sweep.
Speciality knives are made for larger cuts of meat, such as the Roast Beef
Slicer, a knife that may have a blade 12 to 16 inches in length for slicing
thick cuts of prime rib. Varying in flexibility, a carving knife may have a rigid
blade that is used for slicing roasted meats; a more flexible blades for
poultry; or a very flexible blade that is most often considered a blade for
slicing smoked pork and fish.
Knives used for both carving and slicing may be
produced as electric knives that use two blades to accomplish various cutting
tasks. The electric knife contains two very sharp, thin blades that move
independently in a back and forth motion to slice or carve through many
different types of meats. Most often the best choice when there are a variety
of textures being sliced, electric knives are versatile at cutting soft
vegetables such as tomatoes as well as a variety of meats from fish to beef.
Carving knives are often sold in sets that include a
knife and a carving fork. The carving fork is designed to hold the meat steady
while the food is being sliced, thus keeping the other hand safely away from
the knife blade while cutting. Carving forks typically have two long, sharpened
curved prongs to easily be inserted into large cuts of meat while keeping the
meat stable as it is sliced.
