Potato Masher

A potato masher is a kitchen utensil used to puree potatoes after they are cooked or to puree other soft foods for making food dishes requiring a smooth textured ingredient. Potato mashers are typically made of stainless steel or nylon and are available in a variety of different styles, all working equally well. When making mashed potato dishes, mashed sweet potatoes, or to puree ingredients to make baby food, a sturdy masher makes the preparation process very easy.

The first potato masher was a rock or smooth stone, followed by a hand-shaped masher made of wood. With the machine age, the wood masher evolved into a hand or machine-turned wooden mallet. In the mid to late 1800s, two masher types of the modern design we see today emerged. The most popular has an S wound wire that is flat at the bottom, or sometimes a round or square wire grid that is flat at the bottom. This is probably the potato masher your grandmother had. Because of the room between these S winds, there is never the worry of over-mashing the potatoes. The other type of masher has a round disc with holes drilled into it, but it can over mash the potatoes.



Egg Piercer

An egg piercer is a kitchen tool that is used to break a tiny opening in an egg shell to prevent the shell from cracking and the yolk from turning green while boiling. This tool is typically a sharp steel pin that is housed inside a base and that protrudes only when an egg is pressed onto it. An egg piercer also can be used to prepare egg shells for crafts.
The base of the piercer typically is spring-loaded, so when the operator presses the egg down on the piercer, the needle will pop up and poke a tiny hole into the shell. An egg piercer can come in a variety of shapes, sizes and colors to fit any kitchen décor. Most piercers are not much bigger than the eggs themselves and are small enough to fit into a drawer for storage. They can be made of stainless steel or plastic, and some even are shaped like a hard-boiled egg. Some people simply use a push pin to pierce an egg shell.

Zester

A Zester is a special kitchen tool that is used to shave bits or strands from the outer most layer of covering on citrus fruits such as lemons, limes or oranges. By adding this layer to raw or cooked foods, the flavor of the food being prepared is enhanced with the oils of the fruit.
Hand zesters are available in several different types. A single headed zesting tool consists of a handle at one end and small cutting holes at the other end. The cutting holes remove narrow shavings of zest from citrus fruits as the tool is pulled along the skin of the fruit. The zester cuts deep enough to remove the colored portion of the skin, or zest, but it does not cut deep enough to remove the bitter layer below the zest called the pith. Some models also have a single cutter below the cutting holes at the top. The single cutter runs perpendicular to the smaller cutting holes and is used to remove wider and longer portions of the zest that can be used as a garnish or decoration. A second type of zester is a grater or rasp-styled grater that may have different sized holes to provide different sized bits for the zesting process. The grater is a long narrow stainless steel tool that has sharp teeth to carve out bits of the peel as it is moved across and around the fruit skin. The zester is easier to use and is more efficient in removing the zest than other tools such as knives or vegetable peelers. Zesters can also be used to cut curled shavings from blocks of chocolate, creating attractive garnishes or decorations for desserts.

The device will have both a handle, and an actual Zester part, which will be made of stainless steel with fine, sharp-edged holes in it. A Zester allows you to create fine, thin, julienned strips of zest without bitter white pith on them. To accomplish the same without a Zester can be very fiddly, and you usually end up getting white pith along with your zest.

Though Citrus Zesters are cheap, many people resist buying them because they are wary of kitchen gadget overload. Without a Citrus Zester, though, making a zest to garnish a drink or a dish is such a pain that, to be honest, you often just leave it out.
