Broiler Pan

Broiler pan also known as a broiler roaster, oven roaster or oven broiling pan, this piece of cookware is used to broil foods in the oven such as steaks, roasts, or various cuts of meat, poultry and vegetables. Typically constructed of stainless steel or heavy gauge steel with a black porcelain enamel, Broiler Pans consist of two sections, a low walled pan section and an upper cooking surface that is the broiler plate lid. The cooking surface or lid, which contains open slits and small holes, holds the food as it broils while the pan below catches the drippings. Since the lid has only minimal openings, it keeps the hot grease and drippings contained within the pan so they don't flare up and burn the bottom of the food as it broils. With cooking surfaces that generally range from 6 to 12 inches in width and with 10 to 18 inches in length, the Broiler Pan can be sized to fit a variety of ovens as well as a variety of different cooking tasks.

A tool used for pressing garlic cloves through small holes to extract the pulp, oils, and juice from the garlic. Some of the garlic pulp remaining on the press may dry quickly, so it is important to clean the press immediately after using it to make cleaning much easier. Most garlic presses are manufactured from aluminum, stainless steel, or strong plastics.

Pressed garlic is much easier to use and prepare when cooking. Pressed garlic is also said to unlock all of the nutrients and health benefits of garlic. It is thought to be stronger and more flavorful than mincing as well. Garlic crushed by a press is generally believed to have a more robust flavor than minced garlic. More of garlic's strong flavor compounds are liberated and mixed through the pressing process. Some people prefer the flavor of pressed garlic.Raw-foods chef Renée Underkoffler says "a good garlic press makes dealing with garlic a pleasure." Pressed garlic has a lighter, more delicate flavor than minced garlic because it excludes the bitter center stem.

If you want to press your garlic, remove the husky dry cover from the outer part of the garlic cloves. Select garlic that does not have any green shoots, and if it has them, remove them. The size of your garlic will determine the number of garlic cloves you can press at the same time. If it is a small press, then only put one garlic clove in the press at a time. Place the press over a clean container for the garlic to fall into. Press and hold the handles closely until the garlic comes out in a paste.

A citrus juicer is a kitchen tool specifically designed for removing the juice from citrus. Both hand operated and electric versions are available, with many cooks preferring one or the other, depending on how much citrus needs to be juiced. Most cooks can find a use for a citrus juicer, making it an excellent tool to have around the kitchen and a good gift as well. Most kitchen supply stores stock citrus juicers, usually in a wide range of styles.

The most simple type of citrus juicer is a citrus reamer. A citrus reamer consists of a ridged cone attached to a handle. The consumer cuts a piece of fruit in half and holds it in one hand while pressing the conical part of the reamer against it to extract the juice. As a basic, easily used kitchen tool, a citrus reamer makes a great juicer. As one can imagine, using a citrus reamer for large volumes of juice can get tiring. A citrus reamer also does not strain out pulp or seeds.

There are a wide variety of automatic Juicers, also known as Juicing Machines, with numerous features to consider. Typically, automatic juice extractors are categorized into centrifugal juicers or masticating juicers. The centrifugal juicers are built of stainless steel or plastic with round containers placed over a rotating motor that drives the rotating blade. Molded into the circular shape is a food chute that may be crescent or rectangular shaped. The typical horsepower (HP) will range from 1/4 to 3/4 HP, providing from 3,600 to over 20,000 revolutions per minute (RPM's). The higher RPM's of the centrifugal Juicers causes more heat and more oxidation (foaming action) to the food being crushed, which decreases the nutrients in the food. Some models allow for continuous juicing so fruit and vegetables can be continually added to the machine without shutting down to remove pulp from holding compartments or containers. The Juicer produces good quality juice, which is often pulp free. It also produces a good yield from the item being crushed.
